"Just Right" Porridge is a keto-friendly breakfast option with a blend of ground flaxmeal, almond flour, and sweetened with erythritol/monkfruit. This porridge is just right and offers a comforting and wholesome start to your day.

Ingredients

  • 1⁄ 2 Cup ground flaxmeal (ground flaxseed)
  • 1⁄ 2 Cup almond flour
  • 1⁄4 - 1⁄ 2 Cup Golden Lakanto or plain erythritol/monkfruit
  • 1⁄ 4 Cup hemp hearts
  • 2 Cups unsweetened almond milk
  • 1 Tbsp vanilla extract
  • 2 tsp cinnamon

Instructions

  1. You can make this as one big batch or you can divide all the ingredients into jars or small containers and shake well and keep it in the fridge until you want to enjoy it and just microwave it for 1 1⁄2 mins until warm.
  2. To make it as a big batch combine all the ingredients in a small pot and bring to a light boil stirring occasionally. Once it reaches the desired thickness divide the porridge into 4 equal containers.

Notes

  1. I like to top mine with chopped walnuts/pecans and some fresh berries!
  2. If you need more fats, you can add some heavy cream or coconut cream and mix it in.
  3. If your porridge becomes too thick you can always add a little almond milk in and stir it to thin it out.
  4. About 66g of dry ingredients per serving. But it is always best to weigh out the total batch and divide.
