Crispy Crunchy Keto Crackers
I love a good dip or charcuterie board, but I usually also want something crunchy to pair with them. Sliced veggies or Flackers are usually my go to. I like the flackers, but hate that they are about $7 per small bag and I can't get them everywhere😫😭 Luckily I was able to figure out a way to make them at home, and they are soo easy (plus way less $$).
Crispy Crunchy Keto Crackers
Ingredients
- 1 Cup flaxmeal/ground flax
- 2 tsp everything bagel seasoning
- 1 tsp olive oil
- 1/3 Cup + 2 Tbsp water
- 1 tsp salt
Instructions
- In a medium bowl mix together the ingredients in a bowl and mix well using a non-stick spoon/spatula.
- Cut two large (12x8 inch) pieces of parchment. Place the mixture on top of own and cover it with the other. Roll the mixture out thin into a rectangle. I try to get clean straight edges but that is just for aesthetic purposes so don’t worry too much if your rectangle isn’t perfect. Then use a pizza cutter or sharp knife to cut equal sized rectangles to get the crackers. I like to cut 4 long rows cut into 6 crackers per row. But you can cut them to whatever size you like.
- Place the parchment on a baking sheet and let it sit for 15 mins. Then preheat your oven (letting it sit a while longer while it preheats to 400F). Bake the crackers for 20 mins. You want to rotate the baking sheet midway through baking to make sure they are all evenly cooked. If your mixture wasn’t rolled out evenly as far as thickness goes, the thinner crackers will become golden faster. Some will be done before the others, just take those ones off the baking sheet to cool out of the oven while the rest finish. This way they all get crispy without any of them getting over cooked. I recommend keeping an eye on them at the 15 min mark until they are done.
Notes
- Store these in an airtight container/ziplock bag in the pantry for up to a week and a half.
- Instead of everything bagel seasoning I also like to sub in 1 tsp thyme and 1 tsp rosemary or 1 tsp Italian seasoning and 1⁄2 tsp garlic powder. If you want a “Sweet cracker” to dip in mascarpone cheese you can even do 1 tsp cinnamon and 1 Tbsp golden lakanto/erythritol/monkfruit (you can also hold the sweetener and do just cinnamon).
