Creamed Spinach Surprise
This is a dinner recipe that will turn you into a spinach lover! In my Creamed Spinach Surprise recipe, flavorful chicken thighs are seared to perfection before being combined with a velvety mixture of cream cheese, heavy cream, and a trio of cheeses, creating a rich base infused with aromatic garlic and nutmeg. As fresh spinach gently wilts into the creamy medley, each bite will leave taste buds craving more. I originally created this recipe based on one of my FAVORITE side dishes to get at steakhouses- creamed spinach. I wanted to make it a whole meal and this did NOT disappoint!
Creamed Spinach Surprise
Ingredients
- 1lb chicken thighs, skinless/boneless
- 1 tsp salt
- 1 tsp garlic powder
- ½ tsp black pepper
- 4 Tbsp butter
- 4 cloves garlic
- 4 oz cream cheese
- ½ Cup heavy cream
- ½ Cup mozzarella Cheese
- ½ Cup parmesan cheese
- 2 oz water
- ½- 1 tsp salt
- ½ tsp onion powder
- ¼ tsp nutmeg (optional)
- 16oz fresh spinach, chopped
Instructions
- Season the chicken thighs on both sides with the salt, pepper, and garlic powder.
- In a large skillet over medium high heat sear the chicken thighs for 6 mins (untouched). Flip the thighs and sear for 4 more mins. Set the chicken aside on a clean plate.
- In the same skillet melt the butter and sauté the garlic for 30 seconds. Add in the cream cheese and stir/whisk until fully melted (about 2 mins).
- Reduce the heat to low and mix in the cheeses, water, and remaining seasonings. Whisk until fully melted.
- Add in the spinach and stir into the mixture well. Allow to simmer for 3 mins stirring occasionally. While it simmers chop the chicken and add it into the skillet. Mix well and simmer for 1 more min.
