Creamy Tomato Basil Chicken
This dish was the perfect way for me to use up some of the tomatoes in my garden! Every year I plant less tomatoes, yet I always have more and more to pick. Luckily I LOVE tomatoes and can can the extra and make some sauce and soups to freeze for later too! I paired my creamy tomato basil chicken with some palmini noodles and sauteed those in olive oil and garlic. It was PERFECT! I used to be able to find Palmini noodles in person at my local grocery store, but not any more. Now I have to buy them online, but I love to have them on hand to add with dishes I would want a pasta/noodle with.
Creamy Tomato Basil Chicken
Ingredients
- 1 ¼ lb chicken breast, skinless/boneless
- 10 oz canned diced tomatoes (or fresh)
- 8 oz tomato puree
- 1 Cup (75g) green bell pepper, chopped
- ½ Cup heavy cream
- 4 cloves garlic, minced
- 1 tsp apple cider vinegar
- 2 Tbsp olive oil
- 1 tsp Italian Seasoning
- ¼ Cup FRESH basil
- ¼ Cup FRESH parsley
- ½ tsp black pepper
- ¾ tsp red pepper flakes
- ¾ tsp onion powder
- ¾ tsp garlic powder
- 1 ½ tsp salt
- ½ Cup shredded parmesan cheese
Instructions
- Start by combining the spices EXCEPT the FRESH herbs in a small bowl. Next take your chicken breast and cut it into thin cutlets. Then take half of the spices and rub them into the chicken. Set that aside.
- Add 1 Tbsp of olive oil to a Dutch oven or large skillet over medium heat. Then add the onion, garlic, and bell pepper and sauté for 3 mins. Add in the diced tomatoes and sauté for 2 mins.
- Add in the tomato puree and the remaining olive oil, vinegar, and mixed seasonings. Stir well. Then add the chicken and cover with a lid. Reduce the heat to low and allow this to simmer for about 8 mins. Flip the chicken then pour in the heavy cream and stir it into the sauce around the chicken. Top with the fresh herbs and shredded cheese. Cover and allow to simmer for 5 more mins.

1. For vegetarians sub out chicken with 10oz tofu cubed. Macros: 313 Calories, 22g Fats, 10g Carbs, 15g Protein.
