BLT Breakfast Muffins

Sometimes you need a breakfast that you can just grab and go or maybe you love a good breakfast sandwich but don’t have time to make my keto bread or bagels- these BLT Breakfast Muffins come through in both of these scenarios! I love them because I can make a batch and have breakfast for a few days and not have to cook. My kids also love these in their lunches too, in case you are looking for something new to add for your kids packed lunch. While you can eat them cold, I either microwave them for 30 seconds or pop them in the toaster oven/air fryer to warm them up.

These breakfast muffins are my take on a breakfast sandwich in a much more portable and easier to prep package! They are delicious and easy to fit one or a few into your day as a breakfast or snack!

Ingredients

  • 12 slices of thick cut bacon
  • ½ Cup cheddar cheese, shredded
  • 8 eggs
  • ¼ Cup mayo
  • ½ Cup almond flour
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 Cup (150g) cherry tomatoes, halved
  • 6oz spinach, chopped small

Instructions

  1. Preheat the oven to 400F and line your muffin pan with parchment liners.
  2. In a large skillet over medium heat, cook the bacon to your desired crispiness. Once cooked through, set aside and crumble.
  3. In a large bowl whisk the eggs with the mayo and seasonings. Then whisk in the almond flour, spinach, and cheese. OPTIONAL: drizzle in a little of the bacon grease too for flavor!
  4. Pour the mixture equally into all 12 muffin liners, top with an equal amount of the bacon and tomatoes, and bake for 25 mins.

Notes

  1. These do freeze and reheat well!
  2. You can mix all the fillings into the mix and pour it into the muffin liners. I like to make sure there is an even amount of bacon in each but that is just my preference.
  3. All keto baked goods need to be frozen or refrigerated.
  4. Omit the meat if you like. Macros: 128 Calories, 11g Fats, 1g Carbs, 6g Protein.
