Individual Banana Nut Muffin

Good morning!! Today I wanted something a bit more substantial for breakfast! So I made this individual Banana Nut Muffin! It’s warm, delicious, and can be made in under 8 mins!! Full of good fats, low in carbs, and even gets a little protein in. These are HUGE muffins best served fresh(although if you bake it vs microwave it stays softer longer)! I topped with 1 Tbsp of @choczero Caramel Syrup (I also have a picture sans syrup). You could toast it and throw on some butter if you like, a dollop of fresh whipped cream, or heat it as is with a sprinkle of powdered erythritol! No need to miss your bakery pastries in the morning! 🍌 Individual Banana Nut Muffin 🍌

358 Calories, 31.4g Fats, 2.8g Carbs, 12g Protein


3 Tbsp Almond Flour

1 Tbsp Coconut Flour

2 Tbsp Swerve

1 Tbsp Butter, melted

1 Egg

1 Tbsp Almond Milk

1 Tbsp Chopped Pecans

1/2 tsp Baking Powder

1/4 tsp Baking Soda

1/2 tsp Banana Extract


Directions: mix the dry ingredients together first in an 8-10oz ramekin. Then add in the wet ingredients and mix well. Microwave for 2 mins, remove from the ramekin and plate. Dust with confectioners Swerve(powdered erythritol) and enjoy! You can also bake at 375 for 12-13 mins!
