I make this and my broccoli salad weekly during the summer for a quick lunch or side dish. When I bring it to BBQs I always leave with an empty bowl too! Discover a new favorite with my keto version of a pasta salad! My Ranch Imposter-Pasta Salad, is a vibrant and flavorful veggie alternative to the traditional carb-heavy pasta salad. This delightful dish features a medley of fresh, crisp vegetables paired with a creamy, tangy ranch dressing that will leave your taste buds dancing.

Ingredients

Salad
  • 22oz cauliflower florets
  • 16 oz broccoli florets
  • 1 Cup (142g) cucumbers, chopped
  • 1 Cup cheddar cheese, shredded
  • ½ Cup (91g) cherry tomatoes, halved
  • ¼ Cup (36g) black olives, sliced
  • 4 slices bacon, cooked and crumbled
Dressing
  • ½ Cup sour cream
  • ½ Cup mayo
  • 2 Tbsp olive oil
  • 2 Tbsp K4K Ranch seasoning (See notes)
  • 2 tsp white vinegar

Instructions

  1. In a large bowl mix together the veggies. Then in a small bowl whisk together the dressing ingredients until smooth.
  2. Pour the dressing ingredients over the top of the veggies and toss the veggies until fully covered.
  3. Mix in the bacon, olives, and cheese.
  4. Refrigerate for a minimum of 20 mins!

Notes

K4K Ranch Seasoning

2 Tbsp parsley

1 Tbsp dill weed

2 tsp dried chives

2 Tbsp garlic powder

2 Tbsp onion powder

1 ½ tsp salt

¾ tsp black pepper


  1. For those that are dairy-free you can sub sour cream with ¼ Cup olive oil. It will be a thinner dressing but still delicious! And substitute cheddar cheese with ¼ Cup nutritional yeast. Macros: 381 Calories, 36g Fats, 5g Carbs, 8g Protein
  2. For vegetarians omit the bacon. Macros: 378 Calories, 34g Fat, 7g Carbs, 10g Protein
