Curry Burger Bake
There is a local restaurant that makes an amazing burger with a curry aioli. And I wanted to try and make a dupe at home and came up with this!! While it isn't the same, I actually love this one EVEN more!! And BONUS extra greens :) This recipe reheats well too!
Curry Burger Bake
Makes 6 servings
1 Serving:455 Calories, 48g Fats, 3g Carbs, 28g Protein
Burger:
1 ½ lb ground beef (80/20)
3 Tbsp lime juice
1 Tbsp yellow curry paste
½ tsp garam masala
½ tsp salt
½ tsp black pepper
Topping:
80g onion, sliced thin
8 oz spinach, chopped
2 Tbsp olive oil
2 tsp yellow curry paste
¼ tsp salt
Aioli:
½ Cup mayo
1 Tbsp lemon juice
1 tsp curry powder
1 tsp yellow curry paste
½ tsp salt
½ tsp garlic powder
Directions:
1. Preheat your oven to 400F.
2. In a large bowl add your ground beef, lime juice, 1 Tbsp yellow curry paste, garam masala, ½ tsp salt, and ½ tsp black pepper and mix well. I like to use my hands to work it into the meat.
3. Then pour the meat into a medium rectangle casserole dish. I used an 11x8 dish. Bake for 30-35 mins until cooked through. Then combine the aioli ingredients in a small bowl and whisk until smooth. Set aside.
4. While the meat is cooking around the 25 min mark take the excess liquid in the dish and pour it into a large skillet (then return the dish to the oven) over medium heat. Then add the spinach and sprinkle with ¼ tsp salt. Cover and let cook for 2 full mins. Set the spinach aside. Then in the same skillet add the olive oil and curry paste and mix. Add in the onions and toss well. Sauté until tender (about 3-5 mins).
5. Slice the burger bake into 6 equal sized servings and top with spinach (37g), sauteed onions (12g), and drizzle with the aioli (about 1 Tbsp +1 tsp).
