Keto “Rice” Krispie Treats

I am feeling on top of the world today! I threw in some jeans ( in all fairness only because all my “athletic” leggings and jeggings are dirty) and I blew out my hair (for almost a week it has just been in a nest in the top of my head). It feels so nice to get ready even though I have NOWHERE to go. But the biggest improvement in my mood came from these bad boys!! Keto4Karboholics Keto Krispies because I was REALLY REALLY craving Rice Krispie treats. And I ALMOST caved and made a batch. But they are my biggest weakness because when I make them I can’t have just one. I eat a whole damn pan. So I said, “Come on Kas you can make a keto version” and since I have been too lazy to make a keto marshmallow I found some on Amazon (but feel free to make them homemade) and I had all the other ingredients laying around. These killed my craving and were really good. So good the kids each had 2 squares each! Pro Tip: the marshmallow say they don’t do when under direct flame. This is not a “suggestion” I can confirm they just melt🤣 I had bought the marshmallow thinking so would make keto s’mores and I was sadly disappointed on that front. But being the rebel I am I had to test it.

Keto Krispy Treats

Makes 12 Servings

1 Serving: 156 Calories, 13g Fat, 2g Carbs, 8g Protein

1 Box Magic Spoon Frosted Cereal

3 Bags Keto Marshmallows(192g per bag)

6 Tbsp Butter

1/2 tsp vanilla extract

Directions:

In a large pot melt the butter over medium high heat.

Add in the marshmallows and stir with a nonstick spatula until smooth (about 3 mins). Remove from the heat.

Add in the vanilla extract and stir. Pour in the cereal and mix well.

In a parchment lined 9x13 dish pour the mixture in. Press it down firmly. I like to use another sheet of parchment paper and press down. Then refrigerate for 3-4 hours. Keep in the fridge until ready to eat.
