Baked American Goulash
Makes 6 Servings
1 Serving: 231 Calories, 10g Fat, 7g Carbs, 23g Protein
1.25 lbs 90/10 ground beef
¼ cup yellow onions, diced
3 garlic cloves, minced
1 cups water
12 oz canned tomato puree
8oz canned diced tomatoes
1 ½ tablespoons Italian seasoning
2 tsp salt
½ teaspoon paprika
½ teaspoon black pepper
10 oz riced cauliflower, steamed
10 oz cauliflower florets, steamed
Directions:
1. Preheat the oven to 400F.
2. Place the ground beef in a large cast iron skillet or other oven safe skillet bring over medium heat. Cook, breaking up with a spoon or spatula, until the meat is browned and in small pieces. Drain the 1/2 the grease from the pan.
3. Add the onions and garlic to the same skillet and stir together. Continue to cook for another 5 minutes or until onions are translucent. Add the water, tomato puree, diced tomatoes, Italian seasoning, salt, paprika and black pepper and stir together. Bring to a boil and then reduce heat.
4. Add in the cauliflower and stir well.
5. Place skillet in the oven and bake for 15 mins. You can sprinkle an OPTIONAL 1/4 cup of mozzarella cheese on top and bake for an additional 2-3 mins until melted.
