I love Ice Cream! And I have been trying to come up with the perfect creamy, delicious, and keto friendly version to satisfy my craving. I finally did it! Presenting Double Churned Almond Joy Ice Cream!! Drizzled a little @choczero Chocolate Syrup on top and it’s perfection!
Keto4karboholics Almond Joy Ice Cream
Makes 6 Servings(2 Scoops): 343 Calories, 33.7g Fat, 2.6g Carbs, 5g Protein
4 Egg Yolks
1.5 Cups Heavy Whipping Cream
1/2 Cup of Powdered Swerve
1 Tbsp Vanilla Extract
1/3 Cup of Unsweetened Coconut Flakes
2 Tbsp Sugar Free Chocolate Chips( Lily’s)
2 Choc Zero Milk Chocolate Squares(or other sugar-free chocolate) broken into chunks
1/3 Cup Sliced Almonds
1/4 tsp Salt
2 Tbsp MCT Oil
In a sauce pan add heavy whipping cream and swerve and wish until smooth(do not boil). Remove from heat and add MCT oil, Vanilla, egg yolks(yes uncooked), and salt. Place in fridge for 3-4 hours to cool. Once cooled add to ice cream maker and run for 25 mins. Then add the remaining ingredients and allow to run for 10 more minutes. Pour into a air tight container and place in freezer for 2 hours. Then return to the ice cream maker to churn for 15 mins. Scoop and enjoy!
