CBR Bombs(Chicken, Bacon, and Ranch)

With my team in the Super Bowl( #gopats) it’s time to start trying out recipes for the big day! And tonight’s does not disappoint! I call these C.B.R Bombs(chicken, bacon, and ranch). A delicious gooey cheesy center filled with bacon and chicken surrounded by a golden, crispy, butter bread! We dipped them in some ranch dressing and that was perfect!

 

CBR Bombs

Makes 8 “Bombs”

1 Serving: 246 Calories, 19g Fat, 3.2g Carbs,13.5g Protein

Filling(makes 9 servings you only use one serving in this recipe use he rest for salads or lettuce wraps)

1.5lbs of Chicken Breast(cooked and shredded)

3/4 Cup Sour Cream

6oz Cream Cheese

2 Cups Cheddar Cheese

6 Slices of Thick Cut Bacon Cooked

1 Tbsp Parsley

1 Tbsp Dill

2 tsp Garlic Powder

2 tsp Onion Powder

1 tsp Salt

 

Bread:

1 1/4 Cups Almond Flour

1 1/12 Cups Mozzarella Cheese Shredded

2 Tbsp Ground Flaxseed

1 Egg

2oz Cream Cheese

1/2 tsp Salt

1/2 tsp Baking Soda

Optional Glaze:

2 Tbsp Melted Butter

1/2 tsp Chives

1/2 tsp Parsley

1/4 tsp Garlic Powder

 

Place cooked shredded chicken in a crockpot with the other filling ingredients and cook on low for 4 hours or high for 2 hours. Stir occasionally.

Once the filling is done preheat the oven to 400 degrees F

Melt the mozzarella and cream cheese together in a microwave-safe bowl for 1 minute. Stir, then heat another 30 seconds. Add the egg and mix until blended.

Add the dry ingredients and mix until thoroughly combined (use your hands if needed).

Line a cookie sheet with a piece of parchment or a Silpat.

Break the dough into 8 pieces (dampen your hands with water to make handling the dough easier)

Use your hands and roll a portion of dough into a ball and then flatten it on the cookie sheet. Repeat the process for the remaining dough.

Take 1 Cup of the filling and evenly divide it among the 8 flattened rolls then fold the dough up around it and roll it perfectly into a ball.

Bake for approximately 13-15 minutes until the dough browns. 2 minutes prior to being done you can combine the glaze ingredients and brush them over the rolls.
