Maple Bourbon Meatballs
Dinner tonight was my famous recipe for Maple Bourbon Meatballs! They are delicious, sweet, and have a little kick to them! I came up with the recipe originally when I was not keto and then modified it to fit Keto and I think I enjoy them even more now! I drizzled a little of the sauce over some mashed cauliflower and this dinner was to die for! Recipe is below!
Maple Bourbon Meatballs
Makes 35 Meatballs 1 Serving(1 meatball): 163 Calories, 1g Carbs, 14g Fat, 10g Protein
Meatballs
1.5 lb ground beef
1.5 lb ground pork
1lb thick cut bacon
1/2 cup shredded Parmesan/Romano mixture
1/4 cup Ground flaxseed
1 teaspoon salt
1 teaspoon pepper
1 egg
2 teaspoons garlic powder
Maple Bourbon Sauce
1 cup Erythritol
3 Tbsp chili paste
1/2 cup Bourbon
1 cup LOW carb BBQ Sauce
5 Tbsp Sugar-Free Pancake Syrup( I used Choczero)
1/2 cup water
Set oven to 400 degrees. Start by placing the bacon into a food processor or blender with the egg. Once it has been blended into a smooth paste(I know sounds appetizing right ) combine it with the ground pork and ground beef. Mix in the cheese, ground flaxseed, salt, pepper, and garlic powder and work the into the meat mixing with your hands. Once thoroughly mixed begin forming the meatballs and place them on an aluminum foil lined baking sheet and into the oven for 35-45 mins or until browned. Once done immediately transfer to a crockpot set to low. Then combine the erythritol , chili paste, bourbon, low carb BBQ sauce, sugar-free pancake syrup(I used Choczero Maple), and water into a sauce pan and heat on medium. Stir frequently until the edges start to bubble, then transfer to the crockpot. Mix the sauce and meatballs together and cook on low for 2-3 hours. Enjoy!!
