Pork Carnitas

Pork Carnitas for dinner tonight!!! Very very delicious! Plus incredibly easy to make(less than 15 mins of prep). You will get several meals from those I like to take half of the shredded meat and put some dry rub BBQ seasoning on it and the other half gets taco seasoning. You can use the meat throughout the week to top salads, on pita pockets/low carb wraps, or omelettes. This was on a low carb(4net carb) wrap with 1/2 cup of meat, 1/4cup of Roma tomato, 1/4 cup shredded lettuce, a sprinkle of cheese, and sour cream. I was supposed to make guacamole to go on top but my avocados didn't cooperate.

Pork Carnitas

1 3lbs. Pork Butt
1 pack of El Paso Reduced Sodium Taco Seasoning(you want this one because it has the least Carbs) 
1 Tbsp of Cumin
2 cloves of Garlic
1 can diet Root Beer: you can omit if you are against diet soda 😉

Place the pork butt in a crockpot on high and sprinkle with the root beer, taco seasoning, cumin, and garlic. Leave it for 6 hours. Then shred the meat. Use it on salads, on wraps, or in omelettes!
