Keto4Karboholics Ice Cream "chipwhiches"
So after coming up with the most delicious keto chocolate chip cookie ever I was thinking how could I make this dessert any better? Chip-wich!!!!! Add a 1/4 cup of vanilla bean Halo Top ice-cream between two of these big delicious cookies and you get perfection! Me and my husband had to share it was so big! 3.5g of carbs total!!!
Kassey's Chocolate Chip Coconut Cookies
1 ¼ cup almond flour
1 tbsp ground flaxseed
1 ½ tsp baking powder
4 Tbps of shredded unsweetened coconut
1/2 tsp salt
2/3 cup sweetener of choice(Swerve)
5 ½ tbsp butter, cold or room temp
½ tbsp sugar free maple syrup
1 1/2 tsp vanilla extract
1 lg egg
½ cup sugar free Hershey's chocolate chips
Preheat oven to 325 F, and line 2 baking sheets with parchment paper or silicon baking mats, or can grease them.
In a large mixing bowl with electric hand beater or a stand mixer, cream butter and granulated sweetener until well combined.
Add egg, maple syrup, and vanilla extract to mixing bowl and mix in until combined.
In a separate large mixing bowl combine: almond flour, ground flaxseed, baking powder, unsweetened shaved coconut and salt. Stir until combined.
Add the dry ingredients to the wet ingredients and mix in until combined.
Fold in chocolate chips.
Place tbsp size spoonfuls across cookie sheet 1 ½ inches apart.
Bake for 12 to 15 minutes, or until cookies are browned on the bottoms.
Let cool for at least 5 mins.
For the Chipwich ice cream sandwich make 6 large cookies.
