Keto Latkes
A few of my followers celebrating Hanukkah asked me to ketofy Latkes! So I took it on and boy are they tasty!! I topped mine with a little sour cream and chives! My kids preferred ketchup like a hashbrownπ They were super easy to make and took less then 10 mins start to finish!

Latkes
Makes 4 Servings
1 Latkes: 116 Calories, 8g Fat, 3g Carbs, 5g Protein
4 Cups Riced Cauliflower, steamed
2 Tbsp Coconut Flour
2 Tbsp Parmesan Cheese, grated
1 Large Egg
2 Tbsp Scallions, diced
1 tsp Salt
1/2 tsp black pepper
1/2 tsp garlic powder
Directions:
1. Take the steamed cauliflower and SQUEEZE all the excess water out! I like to use a clean kitchen towel to do it.
2. Then in a medium bowl mix all the ingredients together well EXCEPT the butter.
3. In a medium skillet melt the butter over medium high heat.
4. Divide the latkes mixture into 4 equal balls. Then press the ball flat between your palms. Then place it on the skillet. Repeat with the remaining balls.
5. Allow to brown for about 3-4 mins then flip and repeat.
