Turkey and “Rice” Soup

If you are looking for a delicious feel good soup to use leftover turkey(or sub chicken) then look no further!! This fragrant and delicious soup will keep you warm and is a staple for the winter in my home. I make a double batch and freeze half in single servings to pull out when a cold strikes my house!!!

Feel Good Turkey and “Rice” Soup

Makes 8 Servings

1 Serving: 285 Calories, 20.8g Fat, 3g Carbs, 16.4g of Protein.


4 Cups of Chicken Stock

2 Cups of Water

10oz of Chopped FRESH Spinach

1 Cup Celery

½ Cup Onion

2 Sprigs of Rosemary

4 Sprigs of Thyme

2 tsp of Garlic powder

1 tsp Cayenne pepper

1 tsp(or more to taste) of Salt

1 tsp Cracked Black Pepper

10 Tbsp Butter

1lb Diced Cooked Turkey

3 Tbsp Apple Cider Vinegar

24oz Riced Cauliflower(frozen is fine)

 

Directions:

  1. Dice your celery, onion, and turkey and add to a crockpot or stock pot.
  2. Pour the chicken stock, Apple cider vinegar, and water in the pot over it.
  3. Sprinkle in the seasonings and riced cauliflower and mix well.
  4. Finally add the butter and clock on low for 4-6 hours in the crockpot or allow to simmer for 2-3 hours on the stove. Add the spinach the final 10 mins.
