Keto General Tso Chicken with Fried "Rice"

General Tso Chicken over a bed of fried cauliflower "rice". 4g net Carbs!

General Tso’s Chicken
6 Small Chicken Breasts
¼ cup baking powder
1/3 Cup Almond Flour
1 Large Eggs
Peanut oil for frying (you can use coconut oil or olive oil)

Sauce
1/4 Cup Chicken Broth
3 Tbsp. Rice Vinegar
2 1/2 Tbsp. Soy Sauce
2 Tbsp. Reduced Sugar Ketchup
2 Tbsp. Erythritol
2 tsp. Sesame Oil
1 tsp. Hoisen Sauce(sugar free if you can’t find it you can omit)
1 tsp. Red Chili Paste
2 tsp. Garlic Powder
1/2 tsp. Ground Ginger
1/4 tsp. Xanthan Gum

Chop chicken into little nuggets. Place in a large bowl. Sprinkle all the baking powder over the chicken and mix. Whisk the egg, then add to the bowl with chicken. Mix well. Combine almond flour to the chicken and mix. Heat 3 inches of oil in a small pot to 365 degrees. Slowly add the chicken in small batches and cook for 4 minutes, or until golden. 
Preheat oven to 325F. 
Make sauce by adding all the ingredients except the xanthan gum into a saucepan at medium heat and whisking slowly until it is simmering. Add the Xanthan gum and continue whisking for 2 more minutes. Mix in chicken covering each piece in the sauce. Transfer to baking dish and set in the oven for 15 minutes.

Cauliflower Fried Rice Chinese Style
1 bag of frozen steamable riced cauliflower
2 Large Eggs
2 Scallions
1 Chicken Breast diced and cooked
2 Tbsp of Soy Sauce
2 Tbsp Sesame oil
1 tsp of Ground Pepper
2 tsp of Minced Garlic
1 tsp of Ground Ginger
1-4tsp of Sriracha Sauce to make spicy (optional)
Add in other vegetables if your macros allow.

Steam Riced Cauliflower( they make steerable bags or you can steam it in a pot or steamer). Once done, and this is the most important step, place the cauliflower onto a clean dish towel and squeeze out as much water as you can!!!
Dice scallions.
Add sesame oil to pan, add riced cauliflower, and start to fry the cauliflower.
After a few minutes, push your cauliflower to one side of the pan, adding your garlic, ginger and scallions to the empty side.
Add soy sauce and black pepper to the "rice".
Mix everything together and allow it to fry for a few minutes.
Push all your ingredients to one side of the pan again. Add your eggs and allow them to cook.
Add your veggies if you are adding additional ones and mix everything in well, chopping the egg up to form smaller pieces.
