Creamy Tomato Soup

Makes 5 Servings

1 Serving: 336 Calories, 31g Fat, 6g Carbs, Protein 5g


1⁄2 Cup butter

4 cloves garlic, minced

20oz canned diced tomatoes 

2 Cups chicken broth

1⁄2 Cup heavy cream

4oz cream cheese

1 Tbsp erythritol

1 tsp basil

1⁄2 tsp red pepper flakes 

1⁄2 tsp oregano

1⁄2 tsp salt

1⁄2 tsp black pepper


Directions:

1. In a large pot melt the butter over medium high heat.

2. Add in the garlic and sauté for 1 min stirring periodically.

3. Add in the remaining ingredients and bring to a light boil (about 3-5 mins). Use an immersion blender or blender to puree the soup (so it’s not chunky) and allow to simmer for 5 mins.
