Bacon Chicken Caesar Casserole

Bacon Chicken Caesar Casserole

Makes 8 Equal Servings

1 Serving: 421 Calories, 29g Fat, 5g Carbs, 40g protein

2.5 lb. cooked chicken breast , cubed

12oz of Raw Spinach

2 tsps Garlic powder

1/4 tsp Black Pepper

1/2 tsp Salt

1/2 Tbsp Dried minced onion

8 oz. Cream cheese, softened

4 oz. Sour cream

4 oz. Mayo

1 cup Grated parmesan cheese

4 slices Thick cut bacon, chopped

2 oz. shredded mozzarella

Directions:

1. Preheat oven to 350.


2. Combine cream cheese, sour cream, mayo, and spices and mix thoroughly.


3. In a big bowl combine the cream cheese mixture you just made with the chicken, spinach, parmesan cheese, and 1/2 the bacon and mix well. Dump into a 9x13 baking dish greased. Sprinkle mozzarella cheese and bacon on top. Bake until hot about 35 minutes.


4. To cook in a crock pot: Cook the chicken breasts on low for 3-4 hours or on high for 1-2 hours until they are fully cooked. Drain the cooking liquid. Cut up the chicken and add it back to the crock pot with the rest of the ingredients. Cook for an additional 30 minutes until hot.
