Keto4Karboholics  Chocolate Chip Peanut Butter Truffles

1 Serving: 101 Calories, 8g fat, 1g carbs, 3g protein

 

Truffles

¾ cup Peanut butter or nut-butter (choose a low carb option)

1/2 cup Swerve confectioner's (http://amzn.to/2ic013A)

2 tbsp unsweetened almond milk

1 tsp vanilla extract or imitation vanilla

¼ tsp caramel extract

1/3 almond flour

1/2 tsp salt

1/3 sugar-free chocolate chips or dark chocolate chopped (optional)

Outer Coating

¼ cup sugar-free chocolate chips

1 tsp MCT oil

 

1.     In a stand mixer combine the peanut butter or nut-butter and Swerve sweetener and blend until smooth.

2.     Stir in the almond milk, vanilla extract and caramel extract until combined well.

3.     Last whisk the almond flour and salt together and blend on low in the stand mixer until everything looks well incorporated.

4.     If you are using optional chocolate chips, stir them in gently now.

5.     Use a teaspoon to scoop and make 24 balls and place onto a parchment lined baking sheet.

6.     Roll each into a nice round ball and refrigerate for 30 minutes while you make the outer chocolate coating.

7.     To make the outer chocolate coating, place chocolate chips and MCT oil in a microwavable shallow bowl.

8.     Melt the chocolate in the microwave for 30 second intervals until you can stir it smooth without lumps.

9.     Dip each ball into the chocolate and place bake on the baking sheet( sprinkle with crushed nuts or cocoa powder if desired). Allow to harden or refrigerate until hardened.

10.  Keep refrigerated or frozen until ready to serve.
