Keto4Karboholics Red Velvet Cupcakes
Makes 13 Cupcakes
1 Serving: 171 Calories, 15g Fat, 2g Carbs, 5g Protein
Cupcakes:
6 Eggs separated
1/3 cup Coconut Flour
1/2 cup Swerve
1/3 cup Cocoa powder unsweetened
1/2 tsp baking powder
4 Tbsp red food coloring
¼ tsp cream of tartar
1. Preheat the oven to 180C/350F degrees.
2. Grease and line a muffin/cupcake pan.
3. Beat the egg yolks with the erythritol until combined.
4. Add the coconut flour, cocoa powder, food coloring and baking powder. Mix thoroughly.
5. In another bowl, whisk the egg whites and cream of tartar until stiff and firm.
6. Gently fold the egg whites into the cake mixture and combine well.
7. Spoon the cake mixture into the cupcake liners evenly.
8. Bake for 18 minutes until spongy.
9. Remove from the oven and allow to cool before frosting
Frosting:
1/2 cup Butter softened
8oz cream cheese softened
1/3 cup swerve
2 Tbsp heavy whipping cream
2 Tbsp of unsweetened almond milk
2 tsp vanilla extract
1. Blend all of the ingredients together using a hand-held blender or standmixer.
